My mom likes to put kidney beans, chopped green onions, and chopped baby corn into her salads, as well as chopped almonds (or whichever nut you like). It's really good.

I'm Indian, so I grew up eating my mom's Indian "dal," which is basically the Hindi word for "lentil soup." Here are some great recipes, in which "dal" or "daal" in the ingredients list is "lentil."
