A hickory-smoked Tofurkey sandwich with mustard and pickles is pretty much a daily occurrence. I eat roughly a ton of stir-fried broccoli and zucchini too. Both are reasonably healthy, but only fit comfortably in my daily intake when I exercise at least an hour per day. (Being relatively small is kind of hard.)

You know, pancakes of any sort are actually really difficult to make well and consistently. Cooking fat, pan surface, cooking temperature are all decisive. I think it's a start, but it's a little light on staples--like lentils, beans, greens, vegetables (mushrooms, squashes, citrus/tomatoes), rice/noodles. I suggest planning your meals for the week, and shopping accordingly.

Why do you have your protein set so high? The recommended daily protein intake for athetes and body builders (!) is 0.8 gram per kilo of lean body mass. I don't know what your body fat percentage is, but even if your 160lbs was all lean mass, you'd still only require 58 grams per day (0.8 x 72.5 kg).
