  • Google “beef lok lak” for a low carb dinner. I skip the optional rice and include the optional fried egg. Pictured here with Cambodian street corn roasted in the air fryer. On this occasion I didn’t have limes in the house for the traditional lime and pepper sauce so used some leftover tamarind sauce that was in the fridge.

  • You can make these on a dry non stick pan too on top of the stove too. I sometimes make them with grated Parmesan to use as a garnish when cooking pasta or risotto for company to add a brittle accent to soft dishes.
  • @mjbnj0001 If you google traditional "Soupe au Pistou" recipes you will see a chopped tomato is a classic addition. I skipped it because our next course with Pesto alla Trapanese was tomato based. A dollop of pesto is a great way to make a tasty veggie soup when you don't have good stock on hand.

  • Coached the hubby through a 25 minute dinner. Mash was ready made store bought from the supermarket and just needed warming up in the microwave. Chopped carrots and chicken thighs were roasted together in the air fryer for 20 minutes. In the meantime he could make some salad. We had some leftover aji verde in the fridge.
  • I will be hobbling around on two crutches for a while. Hubby cooked tonight using stuff we had in the freezer: Frozen potato gnocchi, frozen pesto, frozen veg. Even he could convert the ingredients to a decent meal of cheat's soup au pistou (frozen veg, a stock cube, a dollop of pesto), gnocchi with pesto, and salad.

  • What’s your favourite way to cook fenugreek leaves (aka methi). I stir fried a bunch with garlic, onion, chilli peppers, grated carrot, cumin and turmeric. I found it too bitter and the hubby found the taste too strong. What should I do with the other bunch?
  • Pan fried sea bass fillets. One was perfect and the other a fail. Timing of 2 minutes skin side down, and 1 minute skin side up on a medium skillet is perfect for thin fillets. Fail was due to my non stick pan dying. Instead of a lemon wedge, we had some leftover tamarind sauce and aji verde in the fridge.

  • Cambodian beef lok lak and coconut milk marinated air fried street corn. We didn't have any lime in the house for the classic khmer pepper sauce so added a lot of pepper to some tamarind sauce we had in the fridge.

  • Any vegetable that you roast in the oven can be done more quickly using less energy in the airfryer. Toss in olive oil, season and air fry. If you are not sure about timing, try 5 minute increments, shaking each time until tender. I did mushrooms and courgettes last night for 10 minutes at 200C.
