Hubby cooked. Zuurkool stampot with meatballs and salad with ranch.

Peruvian dinner. Salmon tiradito, microwaved sweet potato. Nobu’s signature spinach salad with truffle oil, miso powder and fried shallot.

I haven't posted (or followed) in several weeks, but have been generally keeping to the principles I set out to employ this year, with the major exception of this past weekend. We hosted an Easter brunch, with a full spread of breakfast items and things like a bone-in, baked honey ham and a variety of sides. Then several days of leftovers. My gut doesn't know what hit it … salt shock, fat shock, and more meat than I am usually consuming. So, tonight, other than a lite dusting of grated cheese, here's a simple vegan entree, and it felt good. Since I am a "bachelor" for the weekend, I am also free to adlib to my heart's content.
Fettucine with a "garden style" red pasta sauce (i.e., extra veg included), augmented with more, fresh veg (including frozen peas) and topped with steamed brussels sprouts. Just what a body ordered.

Another "bachelor day" experiment on Saturday … homemade (red) lentil patties, served with homemade yogurt ranch dressing/sauce, accompanied by salad. Very good, surprisingly light yet filling, and I put several in the freezer as another experiment. Lentils (rehydrated from dried in this case), shredded carrot, shredded shallot, minced fresh garlic, parsley, flavorings. The ranch was lowfat yogurt, lowfat sour cream and half-and-half, all on hand (recipe actually spec'ed cream and regular milk and sc) but this lower-fat approach came out well. "Where's the salad?" you may ask … well, it was a long day and the chef got hungry before the photo, lol. Advisory for anyone attempting … smaller patties cook better without excessive browning.

We lived on Chinese takeaway while I visited mom last week because she was tired of the food at her care home. Now that we are home we had some home cooking. Potato gnocchi and tomato vodka sauce pulled out of the freezer. Air fryer roast mushrooms and courgette. Salad with some pea shoots I grew on the balcony. Dessert of Chinese 8 jewel rice pudding.

Tonight's tapas dinner was designed for using up leftovers. It included meatballs we had in the freezer so only took 25 minutes to put together on a weeknight. Cogollos ajillo using up the baby gem lettuce hearts leftover from last night's salad. Portuguese marinated carrots boiled up last night. Some wrinkly old cherry tomatoes lingering from pre-vacation roasted in the air fryer. Albondigas using up leftover tomato sauce from last night that I should have probably thinned down. Spanish tortilla was made from scratch tonight.

Cambodian beef lok lak and coconut milk marinated air fried street corn. We didn't have any lime in the house for the classic khmer pepper sauce so added a lot of pepper to some tamarind sauce we had in the fridge.
