I make something very similar to this with a can of Rotel tomatoes and some cubed white meat chicken with homemade taco seasoning. It is really yummy. Cauliflower is an excellent replacement for rice in almost any dish!

Right, I understand what you are saying. There definitely needs to be some education to everyone about what they are eating - and that includes all types of nutrients. It can be as simple as actually looking at an ingredient list and nutrition facts. Learning to log your food is an excellent start for most people, but you…

Are you trying to stay in ketosis, or just eating low carb? Some people can get up to 50g net a day and stay in ketosis. I have to stay under 30g net. If I go over, my weight loss stalls for a few days. If I go way over, like 50-75, I seem to gain a little water weight. Good luck!

Being 10% bf and at your fitness level is NOT typical of the average American. Your body uses that fuel in different ways, while the rest of us keep stuffing our faces with no end in sight. I wish we could all eat like that, but it's not possibly. On the other hand, you might be interested in cyclic low carb (low carb/high…

I live all the way up north in Hibbing, MN. I moved here from Indiana, so this is my first Minnesotan winter. Wooo!

Low carb has been proven time and time again that it is not a "fad" diet. Americans eat way too many carbs in their diets, and even our own government and "experts" know it. There are tons of articles out there about how the current food pyramid needs to be adjusted to around 100-150 carbs a day. People also need to be…

Okay, the color of your ketone strip does NOT have any indication of it you are burning more or less fat. It simply means that your body is releasing more ketones into your urine. Any shade of pink/purple means that you are in ketosis, therefore burning body fat. Therefore, if you test yourself before a meal, your ketone…

I have lost 132 pounds doing ketogenic low carb since October 2009, but the key is making it a lifetime commitment. You must watch your carbs for the rest of your life! Once I hit my goal, I plan to go into something like maintenence, around 75g of good, healthy carbs. Right now, I stay around 15-25g net carbs daily with…

Thank you all so much for the kind words. It has been such a hard journey, and I know what everyone of you is going through. Being an inspiration to so many friends, family, and random strangers is hard for me because I know how difficult losing weight is. I want everyone to be successful and love themselves for all of the…

I have noticed slow progress in my self confidence. I have been in several emotionally abusive relationships, and I settled a lot of the time because I didn't think I could do much better. That was part of the reason I wanted to make this change in my life. I was tired of just settling for what life gives me. So, losing…
