Thanks all. Yep it's the paste/sauce/puree that I'm wondering about. I like my chili quite saucy but I don't really know how to replicate the juice or sauce you get in tinned tomato products. I'm guessing cooking down and blending is a big part of it, but I wonder if there are additional steps or ingredients.

Cast iron skillet, super high heat, bit of butter (olive oil won't work - you need a higher flashpoint). Sear them both sides (about 10 minutes). This causes the maillard reaction, which is what makes meat in your fave restaurant taste so damn good. Then transfer them to the oven and bake em covered the rest of the way.

Not hating, that's an awesome loss, but I'm wondering how this ELMM plan works when you reach your goal weight? You are reducing your calories as time goes on - basically a sensible diet in reverse... so when you get to your goal weight, what? You are stuck on 1200 calories a day for the rest of your life or you'll balloon…
