The texture of the jackfruit was perfect for the stew after 45 minutes of simmering in the stew. It held together and was firm and beef stew-like. It would also be great as a pulled pork substitute. It really seems like a processed item rather than just fruit. Off to the dentist!

I'm trying to get back on plan after going waaaaay off track. For the past few days I've been making Vietnamese salads with tofu and loving them.
