Merry March

So my second attempt at soy yogurt, using the new 3 quart instant pot, came out really well. I was anticipating it to be kind of thin being the first batch but it was thicker than I thought it would be. I had set it for 14 hours from various tips that I read, but it looked pretty well set at 12 hours and I thought I'd stop there so it is not overly tart. I saved out some for starter to make another batch next weekend. It tastes good and will use this for oats since it's not super thick.
Definitely have been eating some not so great things this week with all these trips to restaurants, and I will be getting back to fully WFPB after lunch today. While I think the social time this week has been good for me it was a lot to cram into one week. I do need to think of some things I might like to do outside work that maybe don't involve cocktails and restaurant food. LOL
Plan for today...
B - ezekiel toast with tahini and sliced tomato
L - looked at the menu and I think a black bean burger and steamed veggies, probably a bloody mary or a mimosa
D - stir fry veggies, brown rice, topped with air fried tofu

Sounds like you've been having a good time socializing, Mihani. It isn't all that easy to find things that don't involve food somewhere along the way.
In a bit of a low spot with energy and creativity at the moment. I've had some setbacks with weaving and I just need to give myself a bit of a break from it.
We're having Tikka Masala with kale bombay potatoes & crispy chickpeas for dinner.

Tomorrow I'm finally starting my salad for brunch plan. The tofu is in the air fryer and I'm prepping a dressing. I'm going to keep it simple by making 1 dressing each week and using boxes of washed and ready greens. I think staying away from bread in the morning will go a long way to staving off my cravings. I hope so!
Our Indian style meal was delish. Tonight I think we'll have the moo shu wraps.
The house still stinks of skunk. The 2 best rooms are my craft room and the spare bedroom. I'm keeping both doors shut. We're going to give the dogs another wash to see if we can take the scent down a notch or two.
It is definitely starting to feel like spring. Another nice day out there.

I have been having a rough week and got a little off track, some junk food here and there, but for the most part sticking to my starch blasters, veggies and fruit. I am worn out honestly, and that makes me more susceptible to slips in diet.
Bisky, retirement party is this weekend I think? Hope all goes well.

Radar's eyes are good, they were looking better after a few hours and we haven't noticed any problems. Ruby got hit worse and was drooling on day 1 but was good the next morning.
Sorry your week was rough. Is there any relief in sight?
My salads for brunch were a success. I made a peanut dressing and had them Thai style this week. I prepped chopped peppers and shredded carrots and had the greens ready to go so it was super fast each day. I think I'll make the red wine vinaigrette next.

Brooks retired Feb. 28. I had friends from all over including Italy. My oldest sister, niece and her husband came. everything went well except snide remarks from my sister. Not going to change her and I did not react Did eat a lot of chocolate was going to weigh today but forgot
Still staying with my Ka’chava protein shakes with one tsp of instant espresso So good Chike came out with a decaf espresso cappacino mix but not vegan Typing this I just realized i can buy decaf espresso to make an afternoon protein shakes

Hi Carla - yes, house is empty. We did so much in the last month getting it ready that we are done for a while.
A small salad with sesame dressing was always included in Japan. I loved it but could not do a big salad for breakfast. i would rather have a green smoothie. Speaking of smoothies have you ever tried Ka’Chave protein powder? It is pricey but vegan and no fake sugars I make one every morning with the vanilla flavor and I add 1/2-1 tsp of instant espresso or coffee ( Sometimes decaf or with caffeine). Just add water and ice cubes in blender and whip it up. I was drinking Chike coffee protein powder but it has fake sugars and not vegan
I had a great cabbage, sunflower seed, almond salad with “mochi rice balls” from Trader Joe’s for lunch today. I loved croutons before diagnosed with Celiac’s and these add that extra crunch to a salad.
Beautiful walk this am with Brooks and Dogs. Obi is getting so good in the leash. Still slaughters the lambs.

I used to always have a green smoothie for breakfast but I haven't been able to get back into it. It is too cold for me in winter.

yep I always press the tofu. We have the 2 of the Tofuture brand presses. I like them because they press while holding the excess water and have a lid. I like to put the tofu in the fridge and press overnight so it is ready to go in the morning.
I had an unexpectedly good salad for brunch. Buffalo tofu over mixed greens with peppers and tomatoes and pickled red onions, with red wine vinaigrette.
oh and guess what? after my comments about craving black bean soup, it turns out it is in our meal plan this week. I think we're having it tonight.

Ladies, sorry I'm not too talkative lately. It's tax season and I have had people off for one thing and another every week this year so far. I am so hopelessly behind I can't even and I need to put in a marathon weekend to finish up getting tax info to the CPA. I hope to get a good start tomorrow but we're behind on everything and I keep getting pulled away from what I want to work on. I've probably only got half of the returns to the CPA and completed so far, and April 15th is looming. Ugh!
I press tofu as well. I use the Tofu Xpress, have two of them. I also froze some tofu a couple months ago as I've never tried that, but I've read it makes the texture really great when you thaw overnight and then cook. It will probably be another few weeks before I get around to trying that. I read several tips on air fried tofu and settled into mixing some nooch, coconut aminos, a little bit of corn starch, garlic and onion powder, no salt seasoning and black pepper in a container, shake it up with cubed tofu, then throw into the air fryer. Super tasty, but I don't make it too often because I'll sit and eat the whole dang batch. LOL

Sorry work is so crazy for you again, Mihani. My air fried tofu recipes are similar to what you're doing. And I could eat it all at once, too. I try to only have it on salad lately instead of constantly picking at it when I walk by the fridge.
With the tofu press talk, I looked mine up on Amazon. I bought them 7 years ago, almost to the day. We've gotten our money's worth for sure!
I have played with freezing tofu. It definitely changes the texture! Wait until you thaw it and then wring it out…like a sponge…I mean it really is like a kitchen sponge. The pre-freeze is great for marinating because it will suck up that marinade like you wouldn't believe. For my air fried recipe I like it better not frozen.
Hopefully you and Brooks can wait until April before relocating, Donna. That is plenty soon enough!

Yesterday I had my salad and was good until dinner. Then I had an ezekiel english muffin with my dinner, and then apple with nut & date mix for dessert and then another english muffin later. Ugh. Oh well, today is a new day! I will have a plain apple for dessert, and my coffee substitute when I get snacky. I'll let you gals know how that plan works tomorrow. (some accountability!)

Interesting, Carla. I look forward to trying the frozen tofu. If you don't think it's as good air-fried what do you normally do with it once it has been frozen and thawed?
I am making a new batch of starch blaster tonight. My favorite concoction that I've come up with so far is chickpeas, red and green lentils, brown and wild rice, dehydrated veggie mix, frozen spinach/kale, soy curls, lots of spices. It sure make my life easier having that ready to go for several days at a time.

The tofu was too dry with my normal air fryer recipe. I've used it in a stir fry. TBH it has been well over a year since I've done much cooking, so I don't remember if the recipe had me marinate it, then add to a stir fry, or add it directly to the stir fry, then add a sauce. That's probably the only time I'd go to the trouble of freezing, thawing and wringing it out. My regular air fried tofu takes me about 2 minutes to throw together because I've made it so many times.

oh and I got into snacking last night unfortunately. I did say I'd update you. On the positive side of things, my week of salads went really well and I upped my greens for the week considerably. I also got on the treadmill 4 days which is up from what I've been doing, but not as active as I want to be.

Have a hair appointment this afternoon so I'm working at home until then. After hair I'm going to go buy some new clothes. Tired of feeling frumpy. I wanted to try to get an appointment with a stylist but nothing available until next week. I am not good at picking out clothes and get frustrated really quickly and don't end up buying much. I'll give it a shot on my own but if I don't have much luck and only get a couple things then I'll book with a stylist next weekend.
Making some oats for breakfast. I am topping with some of my homemade yogurt. I think this is my 4th batch and it is the best so far. I only gave it 9 hours and it's not overly tart like the last batch. It is getting thicker and yummier each batch. I mixed some of the last batch with lemon juice and herbs for a salad dressing that was really good. I need to do like Carla and get back to more greens. I eat a lot of cooked greens with the starch blasters that I've been making, but haven't been eating much raw. Now that the weather is warming up I'll be more into salads again.

I've thought about booking a stylist or at least going into a few stores I like on a quiet day to get some help putting things together. I'm interested to hear how that goes. The way I'm feeling now I want to lose some weight before I do that. I don't need to be at my final goal weight, but I do want to be down a full size or two before I invest in clothing again.
I never went beyond maybe 2 batches of my yogurt. It's great to hear that it does indeed get thicker and better. I just found I didn't use up enough to keep it going, but maybe if I get back on a yogurt kick I'll try it again. The lemon & herbs mix sounds fantastic.
One of our plantage meals came with pickled red onions and I used them for a few of my salads. So good. And so easy to do really, I need to make some up again. If I have a spare onion I will make some up while I'm doing another batch of baked tofu this morning.
I had a good day yesterday, getting in my exercise and not snacking at all.

Well done on the no snacking, Carla. I had a total cheat meal tonight. I went to the grocery after my hair appointment and stocked up on salad greens and veggies, and also bought an Amy's vegan margherita pizza. It was so good, but definitely a very rare indulgence. I threw out what was left so I wouldn't keep eating it.
Funny, I also bought a red onion to pickle.
I did manage to find pants that I liked and looked good, so I bought three pairs in different colors, plus 4 shirts, a lightweight cardigan that I love, a couple new bras. I would still like to find a few more things, but I'll wait a month or two and go to the department store that offers the stylist consultation. It's a service they provide no charge, so I figure why not.
I read that you can freeze your starter yogurt if you don't want to make a new batch. I'll give that a try when I get tired of yogurt every day. Just have to let it thaw in the refrigerator when ready to make more. For now I'm enjoying it. I mixed in some raspberry preserves this morning and it was delicious.

Hi! I hope everyone is having a great weekend. We started off with a vanilla coffee protein smoothie and a 1.5 mile walk. I went fishing. Caught 3 angel fish from my 30 gallon tank and moved them to the 50 gallon tank. Then caught 6 bristlenose pleco and they went to local aquarium store.
Still struggling with chocolate addiction. My black bean soup turned out amazing this time. Brooks cooked the black beans in the instant pot with chipolte peppers, cumin, garlic and onion. He adds a bit of water and usually I drain it and then add better than bouillon and water. This time I used the liquid from the beans, first sautéing a mirepoix mix, then adding a jar of chunky salsa ( we can get freshly prepared salsa in San Antonio) . That was it and so good.Made a few more TY cards. Have a workshop next Saturday for spring and Easter cards.
I will try air fried tofu next week.

Beautiful cards, Bisky. Your black bean soup sounds yum. I tend to avoid black beans other than small doses. If I eat more than a little bit they make me feel sick to my stomach. No other beans do so it's kind of odd. Maybe I should try making my own from dried and see if that makes a difference.
New favorite breakfast: oats on the stove with blueberries (I use the wyman's frozen wild), cinnamon and water. When it's done serve up topped with my homemade soy yogurt, ground chia/flax, a dollop of raspberry preserves. The raspberry preserves do have sugar but I only have a couple tablespoons and sugar isn't a trigger for me.
Heading to the office. Then a memorial service for a friend who passed a couple weeks ago. When I get home I need to do laundry.

B - oatmeal
L - starch blaster, maybe an apple
D - atoria wrap with lots of lettuce, cucumber, tomato, broccoli slaw, a little plant based tzatziki

Mihani, that breakfast sounds really good. I miss my instant pot oats. I enjoyed mixing in all sorts of grains and even lentils in the mix.
This week's meals are spaghetti squash & pasta with not meatballs & parm, Vegetable 'Fried' Quinoa & giant pot sticker, and Lemon Rosemary White bean soup with spring salad.
My rug is off the loom but yet to be hemmed. I'm giving myself a bit of a break from weaving so that I don't push too hard and then end up not weaving for a long time.
Our weather has been warming up, and our daffodils are getting ready to bloom. We even have little miniature daffodils that have already bloomed. I'm getting the urge to garden but it is still too soon. I ordered these birds for the garden. Goofy and endearing somehow. They are around a foot tall.

I've had those garden birds in my "save for later" cart for ages now. I happened to notice that they were 36% off when I was checking out yesterday. I'll let you know what I think of them in person.
I ordered some of the Ka'Chava powder Donna recommended. I've realized that I need a quick and appealing option for breakfast when I don't feel up to making or eating a salad.

The birds are here. They are cute and quirky but only on the one side. I would not order them again because of that, but I found some good spots for them against plants and like them enough to keep them.

Busy busy week! Glad it's over. I am going to the office today then have to run some errands. Hoping to get enough done today that I can stay home tomorrow and work. Our new PT gal is coming in for a while today. I think she's going to work out really well. She's smart and self-directed and likes playing with new software, picks it up quickly.
Carla, that's a bummer the birds are only one side.
I got some polenta on a whim last week and going to make something with that tonight. Will look at some recipes for ideas then wing it.

Got a fair amount done yesterday and I was able to bring work home to do today. Laundry started first thing and just threw together a starch blaster. I ran out of starch blaster on Tuesday and I didn't do as well eating right without it. Just nice to have that set and ready to go. I enjoy it enough to eat every day or even twice a day sometimes, and change it up what I throw in there from one time to the next so it doesn't get boring although I do have my favorite inventions that are on repeat.
Should have all my laundry done by 9:00 and I can get up to my desk. Definitely will be a nap sometime today.
