Its probably solid because of the palm oil. Although palm oil has a vegetable source - its a highly saturated fat. Saturated fats are solid at room temperature. If you want to go for a margarine - you need to go for one that is unsaturated fat - like canola or olive.

If you go by BMI - its anywhere between 110 to 140. I'd aim for the higher end (just because its closer to get to), then reassess when I got there. So you are actually in the healthy weight range right now. 110 would be bordering on underweight, so just depends on where you want to stop.

Maybe add more protein & drop the amount of carbs? And you're probably eating too few calories... go a bit closer to your daily goal, or you will put your body into starvation mode.
