  • Went to the Farmers Market this morning and Strawberries were out! So were a ton of tomatoes. I grabbed some berries and cherry tomatoes along with some bok choy. Yum!
  • Red tea latte and a strawberry muffin from the Farmers Market.
  • Tonight will be burgers, corn on the cob, and mac and cheese.
  • The eating out less thing is HARD. I live in a big city with so many amazing food options and festivals. But my thinking is quality over quantity. So I can still eat out, just not as often and I will go and try the best places. If I go to a festival I will allow myself something (like I will for lunch today likely) and…
  • Gonna reword my habits a bit. 1. Cut out soda and focus on drinking more water. I don't get thirsty so I get dehydrated easily. My doctor said I could also have sparkling water, iced tea, and even gatorade. 2. Eat at home more. Sometimes ordering in is not the end of the world, but we need to make sure we eat what we have…
  • Spent yesterday with some rest, but also reorganized the cabinet above the stove (where I keep oils, vinegars, and seasonings), cleaned off the top of the fridge (snacks), and cleaned out the treats basket. So felt pretty dang accomplished and still did what I could to rest my body and mind. This week I am starting a new…
  • I'm still alive. Been having a really bad week with the chronic fatigue and headaches/migraines. So have pretty much just been working, ordering in food, and sleeping. Feeling a bit better today and will venture outside later to walk to the store. But yea, the week has been hard. I have had multiple break downs about my…
  • Time got away from me, especially since I was in the office Monday and Tuesday for a team retreat. She had something like 15 to 20. The projects were split up between like 3 or 4 of us. I am still not all caught up on everything. Hopefully I will be by the end of next week. Fingers crossed! But that, plus new work we…
  • Stress is very bad for portion control and for making the right choices. Though dinner ended up not being too bad. I baked the boneless/skinless chicken thighs, measured a portion of the pasta, and then had canned green beans a friend had canned last year. So not HORRIBLE. Actually quite happy with myself. I knew it was…
  • Chicken thighs are marinating in Olive Garden Italian dressing. I will likely make a salad to have with it along with some pasta roni or something. I am so stressed about work atm that I am keeping is simple. Not worrying about anything else like calories and macros. Too tired.
  • I'm tired. Today is my first day back to work since the convention (took Monday and Tuesday off to rest and recover). It has been a mess. I have not left my desk except to go to the bathroom and get lunch. Though my lunch was only 2 sliced of sourdough bread with butter because I have no time. After this meeting I am going…
  • I've been sick again and just struggling with pain and discomfort. Thus why I have been so quiet around here. I do have a fun weekend planned because C2E2 starts tomorrow for 3 days. It is the Chicago Comic and Entertainment Expo. Should be a lot of fun. Had a great time last year when I went. Lots of cool celebs, but I am…
  • Been doing good with bunnies this week. I have had salads for lunches. My favorite so far is romaine, arugula, a mix of sprouts/shoots, sweet potato, crispy onions, chicken, pickled beets, and goat feta. Lots of strong flavors keep it interesting. Then last night I had hibachi bowls which had zucchini, onion, and mushrooms…
  • I made chicken hibachi bowls last night (and will eat leftovers tonight). So rice, teriyaki chicken and mushrooms, and stir fried zucchini and onions. Topped with a bit of yum yum sauce (that pink sauce you get at the hibachi restaurant). A little too much sauce. I went to add a bit more and the cat hit my arm and... yea.…
  • As long as I measure everything out, I can keep it within my dinner range calorie wise. But I have to be careful because I WILL over do it on sour cream and cheese. Adding the broccoli helps because it's low calorie and filling. Plus, a baked potato is SO filling to me that I don't want to snack at night.
  • I don't like Tapioca... it's a texture things.
  • So while we are still very early in the season at the Farmer's Market, I am already loving what I can find. Spinach and Arugula. Sprouts and Shoots. Mushrooms. Potatoes and Sweet Potatoes. Beets. And so much more. It just makes me want to eat better!
  • Dinner is loaded baked potatoes (sour cream, cheese, bacon, and steamed broccoli). Other meals this week are Hibach bowls (chicken, mushroom, zucchini, onions, and rice) and Asian noodles with shrimp and veggies. Lunches will be salads.
  • The pasta came out REALLY good even though I reduced the amount of cheese in it. I was even able to have a piece of garlic toast! I just cooked it for a bit less time so the crust did not get too hard/crispy. But it was still hot, buttery, and garlicy so it hit the spot! I will be eating that for a few days for my dinners.…
  • I ended up making cheeseburgers this weekend instead of meatloaf because that is what I was craving. Plus, I had meatloaf the week before my surgery but had not done burgers in awhile. Tonight I am FINALLY going to make the pasta bake. That will cover the next few days. Then will make the fish florentine which I will serve…
  • Ugh. Nic, I am so so sorry you are dealing with that again! My mouth is still healing. I would say I am at about 80%. Still have holes in my jaw and have to be careful with what I eat. As of right now I am staying away from rice, stuff with small seeds, stuff that is crunchy or "sharp", and anything more chewy (so no steak…
  • Yes it was! Strawberry glazed. Yum!
  • Ended up pushing the baked pasta to tonight because I was mentally drained last night. Work this week has been CRAZY! So the next weeks meals include the leftover pasta, meatloaf, and fish florentine.
  • I had a donut this morning... because I could CHEW IT. I could, so I did.
  • Donut and iced red tea latte. Look... I have been on a soft food diet for 2 weeks due to having my wisdom teeth out. I can finally have more chewable foods. Thus the donut lol.
  • Made a piece of salmon along with a baked sweet potato and a side of avocado last night. Came out pretty good. Happy I am finally able to start eating some "normal" meals. Tonight I am making some baked pasta.
  • The large local Farmer's Market is opening up for the season on Saturday! I find I eat so much better during the weeks I go to the Farmer's Market. So I am super excited for the season to start!
  • If I can get up soonish, I will be making some chicken burgers (no bun). The patties will be ground chicken, feta, and spinach served with tzatziki and sliced tomatoes. Then a box of pasta roni on the side.
  • Happy belated birthday Laurie! Update on me. I have at least 1 dry socket on the lower right. This means that the blood clot that covers the wound has gone missing, so the bone and nerves are exposed. Which hurts a lot. Luckily I was able to get in yesterday and they put a medicated covering on it to help with the pain. I…
  • PAV! No tooth problems. This is not fun to deal with! Starting to chew again seems to have caused some soreness in the jaw muscles. So yay... new pain. Luckily it is more of a dull achy soreness then PAIN, but still so annoying. Gonna back up and do softer food again. Most chewing will be like scrambled eggs.
