It's pretty rare that I don't find something that's at least close to what I'm eating in the MFP database. Even my mother in law's homemade Indonesian food has similar foods that I can log. It may just be an estimate some days, but consistently logging everything you eat will definitely help you reach your goals.

I would shred it and then freeze it. It's quick and easy to throw into a soup, reheat for quesadillas, add to pasta, etc.

Feel free to add me - I'm a 40 year old mom of 2 (12 & 8) and work full time at a desk job. I know how hard it is to add exercise into the schedule, but it is doable and it doesn't even have to be that painful. :)

I like to bring hummus, assorted veggies to dip such as baby carrots, bell pepper strips, etc., pita chips or pretzel crisps and some fresh fruit on the side, whatever is cheap and in season. No cooking, maybe just a little chopping of veggies.

I was recently diagnosed with degenerative arthritis in one knee and am learning how to balance protecting my joint with getting enough exercise. I'm seeing some improvement with physical therapy, but I'm bummed to learn that I'm not going to be able to continue some of my favorite exercise.
