I plan on eating low carb for life. Exactly what that will look like might evolve over time, but I don't forsee making any huge changes on a regular basis to the way I am eating now.

That stinks. There is sugar in so many unexpected places. I am sure we all have slipped up unexpectedly at some point. Don't be to hard on yourself and look for alternatives without sugar. I hope you feel better soon.

Yes, if you are trying to control carbs and/or calories you should portion out nuts and not eat out of the bag. You can get into ketosis within a few days, but you will not be keto-adapted for 4-8 weeks. It takes that long for your body to ramp up the enzymes necessary to use fat/ketones as your primary fuel source.
