Exactly what I was thinking. Fellow vegan here. Think nuts, seeds, and oils. Potatoes. Make a sandwich. Put hummus on it. Have you ever tried vegenaise? It's like mayo but vegan, of course. Killer on the cals though! Ummmmmm. Oatmeal with dates in it! Raisins! I dunno girl! What the heck do you have in the cupboard, lol.

Or do a home made bruschetta: diced cherry tomatoes, fresh torn basil, minced garlic and onion, balsamic vinegar, salt and pepper. Serve on some baguette rounds or some kind of cracker you like. Sorry for the multiple posts... I get excited about food ideas... :love:

Roasted red pepper and tomato soup! Corn and potato chowder! (use low-fat coconut milk or creamer or whatever) Curried spinach soup! Butternut squash soup! Carrot and ginger soup! Kale and lentil soup! Black bean minestrone! I love soups because they always taste better the second day :love:

Not all that pricey- I've seen them for $ 30 - $ 60 here in Toronto. A quick google search found this one: http://www.greenhealthcanada.com/Vegetable_Spiral_Slicer.html available for $ 49. I can vouch that they're pretty nifty if you're looking for a new way to eat pasta. :wink:

There's a piece of specialty kitchen equipment called a spiralizer that allows you to make your own "pasta" out of raw veggies. I've done zucchini, carrot, and daikon radish "noodles" very successfully... and they taste GREAT with marinara sauce. Way fewer calories than traditional grain pasta, and fewer carbs.

I stopped eating all "added" sugars - the ones found in ingredient lists ending in the suffix "ose" - after I read that animal bone char is used in many refining processes in order to bleach and filter the sugar. The pit won't "magically" keep the avocado meat from browning, but if you leave the pit in half of an avocado, less surface area is exposed to the air and it doesn't oxidize (turn brown) where the seed was.
