Does the gym have some sort of intro session with a trainer or something like that? I know some gyms do. If they do, definitely use that.

I can, and do, fluctuate far more than 5 pounds within a week. Usually 10 or more. Which is the reason why daily can freak you out if you get emotional (up or down) about every little fluctuation. If it's no big deal, daily is fine. If you fret over every single tenth of a pound, don't do it.

I have found that if you take the 3 over at Fat2FitRadio.com, do all 3, take the average of the 3, it usually comes out pretty close to the caliper readings. At least it has done so in my case. Usuallly within 1% either way.
