I think whether or not you eat back exercise calories is based on how you calculated your TDEE. If you factored your exercise in to your math then I don't think you need to eat them back (unless you do extra than normal). Boulangere potatoes are yummy. Just slice your potatoes very thinly and layer them in an ovenproof dish with onions, herbs and anything else you fancy then cover with stock and bake in the oven till the potatoes are nice and tender.

Quinoa is a great source of protein and if you have it along with some nuts/pulses/dairy in a meal you should have a pretty high protein meal. Chia seeds are fantastic too, I usually just make a chia pudding or throw some in a smoothie.

I do the same as looking4lisa and bake it in the oven for about 20 mins. I usually make a little foil pouch and keep it simple with a bit of lemon or lime juice and some chilli. Its super easy and delicious!

I like to make a stir fry sauce with a little bit of rice wine, soy sauce, honey, chilli and lime juice. Add the rice wine separately and let it reduce a little and add the rest, pre-mixed to your taste. Super easy :)

Keep trying, there's so many options with oatmeal you just need to find the right ones for you. I love it with a little maple syrup or honey or a spoonful of sugar free jam. Then thrown in some fruit (banana and blueberry's are my favourites) and maybe some nuts like almonds or walnuts.

Go see a doctor and or physio as you can't really tell over the internet what the problem is. Rest so you have time to heal. Maybe try using something like comfrey ointment to help with the pain and recovery.

I think home made soup's definitely better than shop bought and I try and make my own as often as I can. I switched to black coffee as I'm dairy intolerant and it just didn't quite work for me with an alternative milk - had to be all or nothing! Now I absolutely love it and don't miss white coffee at all... just wish I could say the same about black tea :(
