I think you have a great strategy, you are being active but not sacrificing some enjoyment of the vacation. I would only add 'stocking up on some healthy snacks' to take with you. If I'm not famished, I'm more sane when I order off the menu of a great restaurant. I make smarter choices.

I'd say teens and younger are missing out on developmental experiences/growth, but are not suffering. Suffering involves pain and toil, not being bored in the family room all day.

There is a lot of guessing. I will add my own main ingredients separately or just select the 'chicken kebab' that looks about right on calories. It's a little easier if you were able to weigh your pineapple chicken kebabs before eating.

TBH, tofu tacos wouldn't be my first choice to first experiment with tofu. I like cooking with tofu but I don't try to pretend it's meat. Why not build up your mileage more gradually. Also, you may want to get a check up, if you haven't. Certain medical conditions can lead to aching legs such as arthritis, blood clots, nerve damage and varicose veins.

I like it for pulled pork and caramelized onions in addition to the usual stews and chilis. Highly recommend giving caramelized onions a try, if you haven't. You get a lot for minimal effort and can freeze the extra.
