Thanks for all your input. It's really helpful. I went off gluten first and it made me feel so much better that I'm not even tempted to eat processed stuff or bread, so far. I made this for Easter breakfast and it was indeed delicious. I used low fat cottage cheese and low fat cream cheese, and regular Colby jack cheese.
