For weight loss, you carbs should be between 50-100g per day. 100-150g is maintenance.

Using the elliptical on a low impact setting (towards the fat burning range) would definitely get you through the summer time, in my opinion anyway. Coconut milk is great in recipes. I've tried using it as a thickening agent in soups before, but I've heard it can also be used in Primal baking (with coconut flour and oil).
