I, too, am gallbladder-less and have no issues following Primal/Paleo. In fact, less than 3 weeks (more like 2) after my surgery I was back on this diet. 2 years later and I still have no problems. Your body will adapt. Feel better soon!

Variety has been one of the keys to my success. If you get bored, you're less likely to want to workout. It sounds like you do a wide variety of things, which is perfect! I say stick with it, and be open to trying new things within your local community.

I have mine set on 55f/30p/15c at 1750 calories. I focus more of the macros than I do the calories tho.

It's definitely not permanent! It's just your body adjusting to the increased fat content. It's especially prevalent for those missing their gallbladders (like me).

I have noticed myself eating wayyy too much cheese lately, and mostly not a "healthy" non-processed type(s). My goal is to not have cheese in or on anything this week, and see how it goes. I love cheesy-gooey-ness so this is going to be a challenge, but one that needs doing.

I agree with all of the comments on this thread. It's all about HOW you cook the veggies, as opposed to experimenting with new kinds. I do highly, highly recommend getting out of your comfort zone, but I understand that can be difficult. As adults it's hard to try new things and break habits we've been developing for years…

Frozen, canned, or in-season only veggies are great options, and I usually look for good deals: I'll buy whatever meat is on sale. The feelings you've been feeling are indeed the beginning's of the carb flu. The eye thing may just be a side affect of the headache. I definitely felt sluggish and not mentally all there for a while. Don't worry, it'll pass.
