How it works at my house with kids and husband alike: I cook dinner, you eat it or you don't but I'm not cooking anything else because you're too picky to eat what I made. You get hungry enough you'll eat it. ;)

I have a set of Shun's that I love. Mine are the Ken Onion ergonomic set because my husband got a killer deal and gave them to me for Christmas a couple years ago but I also love their other styles. My favorite is to bake, broil or somehow cook the fish filet. The magic happens when you dump some mango salsa and chunks of avocado on top of the cooked fish. Oh I could eat it all day long! (Works well on chicken breasts too.)

Well with as good as you're looking you should just make him take you out often (at least four times anyway!) I think #1 & 2 are dressier and 3-4 are a little less formal.
