Exactly what I was going to suggest! I will also add garlic and chop an onion &/or peppers if I have them. I roast them at 425 for about 45 minutes - it caramelizes the onions and peppers, super yummy!

I am totally into spinach right now so my first thought was a spinach salad, lately it's just been raw spinach & sundried tomatoes but I love to make one with raw spinach, cranberries & walnuts or pecans and I make a hot honey/mustard dressing to go over it. Making it tomorrow now!

A few days a week I spend driving all over town for about 5 - 8 hours. I pack a lunch with several snacks. I use the bagel thins for my sandwiches, will pack a baggie of raw spinach and dip that in hummus, nuts, pirates bootey, fruit. Sounds delicious! I am addicted to making pizzas right now on 100 cal tortillas. Depending on what you add to them they range from 200 cals to 300 cals and are totally filling and super yummy!

I try to cook items that will have left overs to make other meals. For example, I almost weekly will cook a roast. We will have it one night with say a salad & root vegetables. Just made one using a 100 cal flour tortilla. SOOOOOOOO good!! Here's a pic: Only 276 calories for the entire pizza and it is totally filling and super yummy! Thanks so much for the idea :flowerforyou:

Have you had issues with high blood pressure? My husband has horrible headaches when he isn't regular with his meds. And dizzy spells too. I have hypothyroidism and will experience headaches if I am needing an adjustment on my medicine. Hope you find the cause! Headaches stink...
