Sometimes for weeks on end my lunch is a baked potato. I top with salsa. Depending on how ambitious I am in the morning, I may add a crumbled bacon slice, too.

Confession: My husband never washes his hair. He has full head of wavy hair, maybe 1.5 - 2 inches long. The only time it sees shampoo is when he gets it cut. What's that - once a month? every 6 weeks?? He rinses it in the shower, but no soap or shampoo.

How much salsa do you have left over? Marinate pork chops in the salsa in a shallow baking pan. Cook in oven at 325 for about 30 - 45 minutes depending on thickness of pork chops. I like to serve on bed of yellow rice, spooning the salsa "drippings" over top.

When I pack a salad for lunch at work, it's really only lettuce. Rarely other ingredients are included, unless we have grape tomatoes.
