I make a "salad" with 1 chopped avocado, 1 chopped cucumber, 2 chopped (small) tomatoes, 2 T. chopped onion, 1 T. Olive Oil, 1 T. Balsamic Vinegar and a splash or two of Lemon Juice. Please add me if you'd like. I'm in the same boat. I get excited to get on MFP every day and then I realize I don't really have any active friends. So other than accountability for myself, I don't find it very motivating. But I love the idea of having a large group to bounce ideas and encourage each other.

I love the recipes on www.skinnytaste.com Last night I made the Butternut Squash and Spinach Lasagna Rolls, which were a huge hit. I think I'll have leftovers for dinner.
