^^^This. A liter of water weighs a kg so doesn't take long for your weight to increase. best bet is stick to one day where you can just on the scales first thing in the morning and dont frustrate yourself by weighing everyday.

Without knowing your weight or height its had to say there low or high. i dont tend to eat over 200 grams per day unless i go out for a meal. If you have the energy to exercise, your seeing gains in weight loss and are seeing changes in your muscle mass (if your strength training) then there is no reason to increase them.…

Define not getting enough? whats your carb intake like? most people tend to eat too many carbs and not enough protein. Good sources are. Wholegrain Rice, Wholegrain pasta, oats, Wholegrain bread, Beans, pulses, Fruit and vegetables.

I dont need to train my legs, i use them everyday. There is no point doing full reps, half reps make you grow the same. You eat all the time, you will never lose weight. I guess walking the trails would strengthen your ankles but its going to take longer if your trying to balance it around work as its going to take alot longer to put the same amount of miles in. Take it steady and let your ankles strengthen, its easy to roll them when you first start out. Strengthen your core, when that fails so does everything else.
