here is my best cookie tip ever. make a batch, roll into flat balls (like as if you areabout to bake them) freeze them on a cookie sheet, place in a freezero bag in the freezer, bake one at a time as desired. i find if i put them in a cold oven, they will thaw out as the oven heats up. they take a few extra minutes to bake

you could also try just cutting the meat down a little... when I make stuff like jambalaya, I use less sausage than required - and I use turkey sausage... make sure it's full of beans and veggies.
