I eat 2 scrambled eggs at 7AM, a homemade granola bar at 9:30, then maybe some cereal or an apple at around 11:00. Lunch at 12:30 is whatever there is in the canteen, and then I don't need to eat between lunch and dinner at 6pm.

You are wrong. OP, I drink Evox Lean Pro Diet Protein Powder, its 98 calories a shake (with water) and it has a whopping 21g of protein. Have that for lunch with some fruit or drink it with milk and you have a low calorie - high protein lunch :)

Don't feel too down about it, I'm in the same boat - lost 15 pounds and cannot see a difference yet, I can just feel it in the way my clothes fit. Keep at it!

for me, that's a sign I need to eat RIGHT NOW. eating around 150g or less of carbs a day seems to help keep that under control (blood sugar from spiking) and I eat an apple during the day as a snack.
