My coworker uses tofu as an egg substitute. She made cupcakes recently. I can't stay I love the taste, but the consistency of the finish product is still the same.

I agree. That sounds high. Why not just do the whey protein powder, fat free milk and water? If you still want the nutrients of the egg, hard boil it and eat only the egg white. Or eat the hard boiled egg white and 1/4 of the yolk. I think fruit sugar is okay, even though it has calories.
