LOL!! I love avocados!! If I could eat one every day I would. I don't do anything but slice and eat, no salt, pepper, etc. I just tried it on toast a few weeks ago and I plan to try it by baking it with the egg in the hole. Oh my...yeah...love avocados!

I cook about a cup as directed and add it instead of rice to lean ground turkey and whatever else you like to use to make the filling for stuffed bell peppers. For whatever reason, parmesan cheese really pairs well with quinoa so I add about 1/4 cup of parmesan too.

LOL! Thanks again everyone! I don't have any blood sugar issues, I was just trying to stay within the sugar limits set by MFP. So far this week, at least, I've not had ANY white or refined sugars YAAAY ME!! Taking this one day at a time. Thanks so much for your input!
