I personally would stop all the maths and just log what you do. You might be gaining muscle weight so measure your waist, chest, thighs etc to better gauge fat loss. I think kind of logging it but skewing the numbers might be confusing things. Good luck :)

Sweet potato is amazing in place of a normal jacket potato with cottage cheese on it. Or you can roast it, make soup out of it... Loads of stuff but having a sweet-jacket is definitely my fave!

In England (where I am), our health service does not consider potato to be a vegetable as it's nutritional values are closer to pasta, rice etc. Just saying :) Here, it's not considered one of your 5 a day etc.

I give you a starting place, 1000 calories for lunch is very high. 700 cals for dinner seems more normal but I would find an alternative for lunch. Even healthy ready meals and soup can be under 400 if you don't have a lot of time.

I have the same problem - seems to be bananas and other fruit that increase it but as they're naturally occurring I don't worry as much. I am making an effort to eat more salad/veg instead though to keep the sugars down.

Herbs, roasting, lazy garlic is awesome and quick! Eating with cheese will be pretty unhealthy so try seasoning instead of eating with something else. Salt pepper, rosemary, thyme, basil or chili if you like it hot!
