Oh, and until you do start logging everything and know exactly how many calories you really are consuming, I suggest you ignore the advice of anyone who has said "eat more". You need to know accurately what basis you are starting from before you can assess whether you need to increase or decrease.

Probably mostly water retention. Damaged muscle fibres retain water during the repair process so there will be a gain in weight after intense exercise. A loss will show after a few days when the muscles have had time to repair, provided in the meantime you haven't stuffed your face!! :)

Following on from a theme above, I'm in a skittles team, and quite regularly handle my friend Dave's balls. Generally accepted guidleine is that a safe rate of loss is 1-2lb per week, 1000 cal deficit per day equates to 2lb per week so you're just within guidelines

Anything provided it is within your calorie limit for the day/week/whatever period you measure over, and isn't likely to keep you awake!! The only issue with eating late is that it may cause indigestion.
