My body doesn't do well with bread and potatoes. While I eating those things I wasn't able to lose weight, now that I have, I see that more than likely I was insulin resistant and not breaking them down well.

I would have to say in my own experience, this is definitely the truth. Also, this is what is recommended in the south beach diet. The presence of protein just allows your body to break down carbs slower, which means your insulin is less likely to spike.

My starting weight was 192. I am now at 180 & I have 10 more lbs to go so I can be insulin resistance/PCOS free :-D. I started about around february/march and my daily calories are 1400.

I'm low carb and I try to do resistance training at least 4 times a week for 30 minutes a day. Is that not enough?

I'm not so sure if it will help you lose quickly, but it will certainly help you quickly get control of your eating habits, which in a roundabout way could lead to faster weight loss.

Whatever seasoning you use, you absolutely have to cover the baking pan in foil, put olive oil on the pieces of fish and bake on 350 for 20 minutes then broil it for 5-10. It will be soft, juicy and well-cooked.
