I'm having the exact same problem. I'm doing a low carb/high protein diet and not even getting slightly close to 1,200 a day. It's bad!! I work out at least 2 hours or more a day as well. I just don't know what to do anymore.. I'm not hungry.

Another AMAZING substitute for pasta is shirataki noodles!! YUMMY!!

There are so many "tricks" to tricking your mind and tastebuds into thinking they are getting carbs :) For pasta use spaghetti squash or shirataki noodles (YUMMY!!) For potatoes use cauliflower.
