Vodka is usually pretty decent for alcohol but I'd be worried about the grapefruit juice. A lot of juices have a ton of calories in them. Combining that with slowing down your metabolism from alcohol can be a bit of a downer the next morning. I usually will do Vodka and diet Coke.

I'm not sure if walking is all you're doing, but for me, I suffered from low energy too until I started weight training again. I honestly think doing that boosted my energy a lot because it increased my testosterone. I even think my hair has been looking thicker.

I'm not a doctor so this is just my own personal experience, but you might be eating too many carbs and not enough protein. When I eat high carbs, I'll usually end up having the same issues as you, but when I balance everything into something like a 60/40 split in favor of protein, I usually am more regular.
