I would actually say it's more important to lift while losing than after, to avoid muscle loss. Personally I wouldn't want to lose a lot of weight, including muscle, just to try to gain the muscle all over again. If you can get a reliable body fat measurement done now, I think you'd be glad you did. If for nothing else to get an accurate accounting of your lean mass. I wouldn't worry about a plateau until it hits. Frankly, for 300ish pounders (and I experienced this firsthand) there's enough weight to lose that a "stall" isn't likely to happen for quite some time.
