I don't eat all of the calories that I burn from exercise. Also, if you're not hungry, then don't eat. Don't eat just to make a calorie goal. This seems to work for me.

I, too, was recently diagnosed with diabetes. Right now it can be controled by diet and exercise, which I'm doing well at. I find that sticking to 1500-1600 calories a day, no matter if I work out or not, keeps the weight coming off. You might be putting your body in starvation mode by eating so little calories. Eat a little more for a few days and see what happens for you.
