panko crumbs are a little better- lighter and crispier and you don't need to use as much as you would with traditional bread crumbs

Really love PB2!!! The chocolate one is really good as well. I like to dip celery in either....a very health and low fat snack. Have also made peanut chicken lettuce wraps with it. Would love to try other things as well. Highly recommend it!

The trick to baking chicken/fish/ anything that you want as crispy as frying is to put a cooling rack on top of a cookie pan, and then put whatever you are cooking on top of the cooling rack. Truly thank you for all the advice and encouragement. Please understand I am not disappointed in the 9 lbs. Just disappointed in the one :) Its that one pound that will get you every time. lol :) By no means am I giving up. Just wanting to make sure that I am confident I am doing the right thing. Thanks for the encouragement and advice! I totally understand that it is a complete lifestyle change, and I accept that. I guess I was just hoping for a teeny bit more than 1 pound on week 2. I am not giving up, but I want to make sure that I am doing the right things as well.
