How come you're not eating the extra calories from working out? I know that exercise calories can be inflated, but you should eat back at least some of them. Have you tried the TDEE method? That way you don't actually have to eat back anything, as they are already accounted for in your daily caloric limit.

My favorite place for healthy food is Greens and Proteins. Delicious, and they put the calories on the menu and website. I think there's two locations. I also love Rachel's Kitchen, which has popped up all over the valley. I've heard amazing things about Go Raw Cafe, but I haven't been there yet. Protein House is good too!

Kind of unrelated, but where are you staying? I live in Las Vegas and there are healthy places to eat, you just have to know where to look! I can give you some ideas. Are you going to be on the strip?

I have an older model Sportline Duo and it's great, even after years of abuse. It has a light on it and you can see your heart rate at the same time as your calorie burn. Definitely seems like you should up the calories, but if you're not logging everything then that might not be true. Try to be really consistent with logging. That way, if something isn't working for you, you can adjust as needed. If you're not logging, then adjusting will be hard because you won't be sure what to adjust…
