I am celiac! I know most people lose weight with it, but I have gained steadily since what I suspect was its inception. I was feeling sick all of the time and started eating chips and junk food because they went down easy. Anywho, everyday is a food adventure with this.

I am curious as to why low FODMAP would be high fat. You should still be able to eat most non-starchy vegetables like greens. Just spraying the baking sheet with nonstick olive oil spray, spreading the leaves, and then spraying the top with olive oil spray should be enough. I cook mine 300 degrees for 20 minutes.
