One serving is 1/4 of the recipe, so its more like 4-5 circles depending on the size of the eggplant and how thin you cut them :) if you want it to look like more, I suggest cutting them thin ;)

Avacado is so good! If you've never eaten it before, try slicing it thin instead of in chunks, that way it won't be over powering :)

Not that I know of, I would just add all of the ingredients to a "new recipe" and use it over if you keep making it. I think MFP is working on a section where you can soon share recipes. Man that would make our lives easier!

I would try measuring yourself, maybe you're losing inches instead of weight. Also, try mixing up your workout. If you mix things up, you will trick your muscles instead of keeping things routine. Keep it up! :)

I do the 30DS as one of my workouts, but i don't do it as my only workout. I get too bored so I mix up the circuits along with cardio and other workout DVD's. I just got her Killer buns and thighs DVD and that's a good burn!

I hear you on that! Now that I cleaned out my jean section I realized, crap, I have no jeans now haha. Not that it's a bad thing! I also don't want to buy too many jeans in the size I'm in now because I plan on going down a few more sizes still!
