Poached eggs on sourdough bread with smoked salmon, spinach and hollandaise sauce. A massive amount of mushrooms and tomato on the side. So good! smoked salmon is expensive though.

Yeah I agree if your only eating 1000 calories a day its unhealthy. If you do it properly though and have a high enough activity level to where you can eat enough food, fiber and micronutrients Id say its Healthy. being overweight is unhealthy

Its probably close. I'm 6"3 230lbs and I am losing weight at 3200 calories (so far). I suggest keep on track 100% for two weeks and see what your weight does. Drop it by 200 calories if you haven't lost any weight.
