Friday night I had a burger (just ground beef made into a patty and fried). Topped with a slice of cheese, some bacon, and an egg. Drizzled sugar free barbeque sauce over the top. It was perfect :)

I want to want this, for all the obvious convenience and nutrition reasons, but I just can't mentally get my head around 1) raw egg, and 2) raw egg in coffee. Makes me want to gag just thinking about it.

If you eat carbs you'll want carbs. That simple. If I eat one slice of bread I will eat ALL the bread, for the next 3 months. If you don't eat carbs, it's only hard for about a week, then you should feel completely in control. Best thing about low carb IMO is not letting food control you.

You can have a really slow metabolism and be hungry all the time. Not being hungry does not indicate your metabolism is slowing down.

Last night I had a couple of skinless hotdog sausages with bacon wound around them and baked in the oven. My partner looked at them on my plate and said "so, you're trying to tell me that's diet food?" like I was mad. Lol.

Not counting food is fine if you are not hungry I guess. But I've tried eating only when I'm hungry and only as much as I need to be satisfied and I am constantly at about 2500 to 2800 cals. So gaining weight. There is clearly something wrong with me. I have to make a conscious effort to stay below 1800 a day.

I don't think you can expect to lose 12lbs water weight in the first two weeks when you only weight 165lbs. If you're 250lbs maybe. You also said you've been low carbing for a month but didn't start logging til a few weeks ago. What's a few weeks? You need to give it time. You need to record everything, and be consistent.

This doesn't sound low carb. Banana's are very high carb, as is honey. Might be low GI maybe. I tend to make up a small tub with something like a cooked chicken thigh, a slice of bacon, a couple of dill pickles, maybe some cream cheese. And a coffee with butter whipped in.
