I would probably maintain around 1600-1700 but any more than that and I would gain (but I'm tiny - 5'3 and <120 lbs and lightly active)

You probably need to do a bulk/cut cycle if you want to gain muscle. You need to up your calories substantially if you want to gain muscle weight. You will gain some fat when you do, but you can eat at a deficit after that to lose the fat and continue lifting to hopefully maintain the muscle.

I would second tempeh, also some fake meat products. I'm a huge fan of the tofurkey brand italian sausage that they sell at Trader Joe's for both taste, cost-effectiveness, and protein content. Each sausage is 280 calories and 30 g protein

21 pounds in 3 weeks is definitely not fat gain, but is likely water retention. I would definitely go get a second opinion, as there are serious medical conditions that can cause that kind of water retention

A lot of food blogs also put up free meal plans with grocery lists. They aren't always tailored towards specific macros, but the convenience is nice. Off the top of my head, ohmyveggies.com posts a weekly (meatless) meal plan with 5 dinners and a shopping list

I don't necessarily plan for specifics days ahead, but my meals are generally in the same range of calories/macros everyday. When I know I'm going to be having a splurge meal or something out of the ordinary, I do plan more rigidly in the morning. Most of the time though, I just log my food right before I eat it

Because it's more dangerous to be severely underweight than to have a little extra fat. OP, go for calorie dense foods (nuts, avocado, oil, etc) and aim to include at least one serving of one in every meal/snack.

You should be treating the protein number MFP gives you as a minimum, not a maximum. Eat all the protein you want! Plus it helps keep you fuller for longer :smile:

5'3, 128 lbs, and 14 inches. Pretty big compared to the rest of me, but I can't complain because it's all solid muscle :) Makes finding skinny jeans that fit right a giant pain in the butt though :frown:

With most brownie recipes you can swap out oil for apple sauce and grated zucchini, and egg for flaxmeal mixed with water. The zucchini and applesauce keep them really moist even without oil (and no one I fed them to knew they were "healthy" until I told them!)

When you go grocery shopping, try to grab one new veggie to try each week. Also experiment with cooking them in different ways, ie I hate boiled brussels sprouts but I love them when I roast them in the oven. There are also some I'll only eat raw and others I only like cooked, so play around with that as well

You definitely need more protein: tempeh, tofu, beans, lentils, etc, and also more fats (more pb, avocado, coconut cream). Both will help you feel more full

I actually am really not a fan of quest bars, they were just eh to me, I like pure protein bars though, especially the cookie dough flavor. The small bars have 20 g protein and the big bars have something like 32 g
