How do you make your crepes? I have found a couple LC ones made with either almond flour or coconut flour. Not sure how they would taste for a perogi casserole though.

Hmmm yes I would think so. http://www.emmafrisch.com/2014/07/radish-zucchini-latkes-with-yogurt-mint-dipping-sauce.html I found this...you would have to substitute the breadcrumbs. I used crushed plain pork rinds usually! They look yummy. Not sure about the sauce though... :neutral:

If you haven't tried of heard of it....you can use radishes in place of potatoes for the hashbrowns. At my local grocery store they sell them already shredded. That is very awesome. We also have fish with our pirogies on Christmas Eve. Also a salmon loaf with creamed peas on top. We make stuffed cabbage rolls also...not for Christmas but just a Polish/ Slovak thing. How funny our traditional foods are similar. Now the head cheese....yea I don't know about that!

This is pretty much what I do. Or if I am having something my husband or son really don't like they will have something like a frozen pizza. I don't make them eat the food I do if they don't like it. But I don't really cook 2 totally separate meals either.

Yes a very hard time. Stressful and sad. My brother passed Thanksgiving time a few years ago so the holidays suck. But I do my best for my son and husband. Plus I hate the dark early nights too ....blah! I just keep saying stay on track! I started gaining my weight back this time last year and I am determined not to do it…

My goal is to get below 140 and into the 130's. I have been bouncing between 140 and 144 for a couple weeks! Being very strict from here forward and I will buy myself a new pair of shoes. I'm a shoe-a- holic..lol

Pounded chicken breast...fill with cream cheese,cheddar and green onions...roll up and wrap in bacon slices. .Bake about 30 min at 375 degrees. Last 5 minutes broil for 5 min to crisp bacon. Yummmmmmm!

The adult beverages were my downfall too! I did well on my food though. Skipped mashed potatoes, bread and stuffing. Had my turkey, squashes,green beans and small slice of low carb cheesecake.

When you say fasting do you mean no food at all....only water? Or I've heard of some people doing the fat fast where all they have is fat...like Bullet coffee with heavy cream and coconut oil? I don't think I would mentally be able to not eat ANY food. I would probably just go really low carb...like I am trying to do today…
