I weigh always after I wake and fasted in the morning then I also sometimes weigh before I go to bed, just out of curiosity. I have to weigh every morning to keep me accountable.

What I do is make bacon crust pizza. Take about 13 pieces of bacon and weave them together. Cool on rack/boiler pan to brown both sides for 20-30 minutes at 400 degrees. My sister has... issues with eating too. How we found helping her eat was protein shakes 3x/day with fruits and veggies to taste. Yep, saying fat makes you fat is like saying if you eat green veggies you will turn green. Your body's metabolism runs on three main sources, fats, protein, and carbs. So, unless your eating in excess the previously mentioned macros, then you won't gain weight.
