I've just been walking for my exercise. My body is tolerating that well at the moment, and I feel like I'm at least doing something. I'm a fan of simple and fresh. The juice of one lemon, 1 T EVOO, 1T any fresh herb if I have it or 1t dried oregano if I don't, salt and pepper. My salad usually includes fresh tomatoes and feta cheese. When this dressing combines with the juice of the tomatoes and the feta, it becomes so creamy and wonderful.
