No way cheat days are necessary and beneficial, s long as you get back on track, you're fine. Chill out, it's the holidays.

Just stick to salt, no stock, but they do have lower sodium stocks, at any grocery. And just make sure to flush out the extra salt by drinking plenty of water.

No way just count your sugars as carbs. Basically, a carb is a carb, but some have more nutrition than others.

You don't really have to "mix it up" as long as you are progressively adding more intensity to your regimen, as you will be getting stronger. The only reason to change workouts is when you get bored.

Calories may be a bit too low especially if you are working out everyday, but if you feel fine, then don't worry. Going over on protein and fat is ok, as long as your energized, don't worry about getting more carbs in.

Taking fish oil can ease joint pain as well.
