Why don't you talk to your doctor and see if he can recommend stretch and strengthening exercises for you? I'd also ask if they can recommend a brace for you to help prevent you from reinjuring the knee.

It's hard to set a pound goal for it because rates change and setting a time frame might work against you. Why not do something different like add 5 fitness minutes a week (5 minutes this week, 10 next, etc.) and have the reward be reaching an hour and twenty more minutes of exercise per week than what you are doing now?…
