You don't have to eat cottage cheese. You could have an egg, some chicken, turkey, etc. instead.

He already has a 1000 calorie a day deficit. Long term, too much of a deficit will be harmful. He is also already eating a very low amount of calories as it is. Slowly increasing your intake with calorie dense foods will get you where you need to be.
