Well it's a start! Left over torterlini in tomato sauce on the bottom, with pickled gherkins, carrots, and my homemade sweet corn relish on top. A miso soup to go with it. At least having this in my bag will stop me having a packet of Jamie Dodgers for lunch, hopefully...

So, its been a while :) Tomorrows tasty lunch is lemon chicken nuggets with blanched veg and spicy ketchup in the bottom layer. The top layer has a baby plum tomato, cucumber, and spring onion salad with an egg. The little sauce tub has my sweetcorn and red pepper relish in it which I use to dress the salad.

Not done a bento for a while but tomorrow's is rice with mystry seasoning (can't read Japanese lol) some beef soboro, a salad, and an egg. I've got a miso soup too.

One from last week I forgot to post, eggs and veggies in the top with some pickled gherkins. Bottom layer is left over rattertouie with chicken breast.

Leftovers today. Pork loin marinated in ginger, soy sauce, and um vermouth because I was out of sake :s with carrot and swede mash and green beans. I'll heat this layer up in the microwave at work. Top layer is more pickled cucumber and apple salad and a couple of boiled eggs.

Back on MFP after a week away. Tomorrow's lunch, I made Origini for the first time! Stuffed with minced beef. Served with boiled veg half of which I threw on the floor. A couple of mini meatballs, some raw cucumber and sugar snap peas and some pickled sweet corn and red pepper relish. Debating an egg to compensate for missing veg. :)

I made some chicken Biryani last night, tons of it. I'm going to be eating it for days! Served with a boiled egg in the bottom layer. If you just roast the tomatos in the oven and blitz with a few herbs, salt and pepper that is about as simple as you can get. A little olive oil tastes nice but you can spray them with low cal spray too.

So I made these little egg cake thingies from this months Slimming World mag. You fry mushrooms, spring onions and ham then put in the bottom of a muffin tin, then whisk up eggs and pour over before baking. You get a little egg muffin and its about 90 calories each. Doing my prep this weekend, got some turkey meatballs on the go. I really like sushi rice so cooking some of that too. How do you guys freeze and use this? Do you just leave to defrost over night then eat or do you reheat then leave to cool and eat the next day?

I did slimming world with my ex last year. He had good results but I didn't loose a thing. The eat as much rice and pasta as you like is misleading as your also supposed to have a 3rd each carbs, protein, and veg on your plate so taking that into account the amount of carbs is restricted.

My friend cooks chopped up duck breast in beer with chillies, spring onion and garlic. So yummy!
