Instead of bread, why not go for gluten free wraps? wraps are less calories than bread and more versatile in many ways. If you have an Aldi's by you, they have a new line of GF food that ROCK! AND they are MUCH cheaper than name brand GF stuff- my husband complains when I buy the name brand stuff anymore.

I know my son has tested sensitive to wheat and a few others (I have not been tested) but refuses, in full teen style to give them up. I limit what comes in to the house though.... My advice is to make gradual changes. Doing all of this at once is hard and unlikely that you will stick with it. My suggestion is to start cutting down 1-2 things off of that list at a time, stick with it for 2 weeks (or more) and then try adding it back in - IF you are sensitive to one of those items, you WILL know…

My husband likes "Simply Asian" brand of instant rice noodles (in a bowl - you nuke). He adds a can of chicken and it is a good quick lunch. You have to watch they also do have wheat noodles though, so make sure you read the container.

What Gosser said. Meat and veggies, VERY limited starches. My hubby does this due to his Diabetes.... It is really not hard at all, you are changing what a "meal" looks like form the "meat and potatoes" to enjoying the good stuff without having to have so many different things on your plate.

I have fibro....I am going to go GF at some point, just haven't taken the plunge yet. Mostly because I buy wheat containing food for my son, then he decides 2 weeks later to tell me that he will not eat it, and I am too poor to let it go to waste, so I end up eating it.....

Why care about fat? Research shows that eating fat does NOT make you fat, and some even show that it helps you loose (you gain more weight drinking skim milk that whole or 1/2 and 1/2). It is good that you are feeling better, but your stomach, IF you are Celieac, will take months at least to heal. You may even have not so great experiences along the way, as now your stomach will start absorbing more, both good and bad. But just like quitting smoking, healing the body takes time.

I cook a lot at home, so my imperfect system is to add all of the ingredients that I put into something, then divide by number of servings and use that in my NOT shared foods.
